Sweet Potatoes
Buying
Small or medium sweet potatoes that are firm and heavy for their size are best. Check for bruises, discoloration or signs of sprouting.
Storing
Like normal potatoes, the best way to store sweet potatoes is in a cool dry place. Refrigerating sweet potatoes may harden the center and alter the taste, so avoid storing these in the vegetable drawer
Freezing
Boil, bake or mash sweet potatoes before freezing. After being cooked they can be frozen whole or sliced. Sweet potatoes will last for up to 12 months in the freezer.
Use up
Use the skins and crisp them up in a hot oven (220 degrees) drizzled with olive oil and plenty of sea salt. They are also delicious as an alternative to a baked potato…yummy with baked beans!
