Leeks

Buying

Look for leeks that have fresh looking, green leaves and a stem that is white, firm and without any signs of decay. Irish grown leeks are usually available between September and March.

Storing

Store leeks in the vegetable drawer of your fridge if possible.

Freezing

To freeze leeks, chop and blanch for 1 minute before draining and placing in freezer bags.

Using up

Try and make use of both the green and white parts of the leek. The white end of leeks is more like an onion and is great use as a base for soups and stews. The green end is perfect for stir-fries and stocks. As an alternative to frying or boiling, leeks are delicious lightly steamed.
