Spring Onions & Scallions

Buying

Look for brightly coloured stems with undamaged leaves.

Storing

Both spring onions and scallions benefit from being kept in the fridge. The best way to store them is to remove the elastic band holding them together and stand them (roots down) in a jar of water, with a freezer bag popped on top. They should last for about 1 week like this in the fridge.

Freezing

Chop first and freeze in a sealed bag or container. Freezing will affect their texture so use from frozen in cooking.

Using up

Spring onions generally have a stronger flavour than scallions. This is important to note if you intend eating them raw. When cooked, however, one can be substituted for the other. Scallions are commonly used in Asian cookery. Spring onions can be used much like regular onions. They taste great simply grilled and generously seasoned. Use up the end of a bunch in fried rice, soups, sandwiches, or salads. Remember that both the white and the green parts are edible.

Good to know!

Spring onions and scallions are easily confused. To tell them apart, spring onions have a small onion-like bulb at their base while scallions have a long white stem that doesn’t bulge.
