Butternut squash
Buying
Choose firm squashes. Check for signs of damage or degradation, especially around the stem.
Storing
Squashes store well at room temperature and are best kept in the cool, open air. There’s no need to keep these large vegetables in the fridge.
Freezing
To freeze a squash, cut it into slices or cubes and blanch for 2 minutes in boiling water, before cooling and freezing.

Using up
Butternut squash can be used in anything and everything, including soups, curries, risotto, or even bread. Roasted butternut squash can even be puréed and incorporated into a baked cheesecake.
Good to know!
There is no need to peel butternut squash! The skins appear really tough but when cooked they become perfectly edible. This gets rid of the need to peel, what a relief!
The seeds from squash and pumpkins are delicious and highly nutritious. After removing, dry them and then roast in the oven. It is not necessary to wash them completely: the remaining pulp will actually give the seeds more flavour.
