Smaller courgettes will have better flavour than larger ones. Check the skin for any dents, bruises or other damage as these will accelerate the process of decay.

To freeze courgettes, cut it into slices or cubes, blanch for 2 minutes, then place in airtight bags. Grated courgette can be frozen without blanching. Store in an airtight container.
It is not necessary to peel courgettes. On the contrary, it is the skin that contains most of its nutrients. Raw courgette is tasty too.
