Peppers

Buying

Peppers should be firm, shiny and smooth, without the presence of stains or wrinkling.

Storing

Peppers can be stored for about a week in the vegetable drawer of your fridge. Wash only when preparing them. Once cut, peppers should be consumed quickly.

Freezing

Peppers freeze well. Simply wash, cut and freeze them (no need to blanch them). Although this method softens them, they retain all their flavour and remain ideal for cooking or to scatter on your next pizza.

Using up

Peppers are a perfect addition to sandwiches and stir-fries. Roast whole with olive oil and salt & pepper. Do you have damaged peppers? Turn them into a cream based sauce of red or green peppers!

Good to know!

Are you only going to use half a pepper? Keep the stalk and seeds on the remaining half. This limits contact with oxygen that speeds up spoilage.
