Courgettes

Buying

Smaller courgettes will have better flavour than larger ones. Check the skin for any dents, bruises or other damage as these will accelerate the process of decay.

Storing

Store it in the vegetable drawer of your fridge.

Freezing

To freeze courgettes, cut it into slices or cubes, blanch for 2 minutes, then place in airtight bags. Grated courgette can be frozen without blanching. Store in an airtight container.

Using up

It is not necessary to peel courgettes. On the contrary, it is the skin that contains most of its nutrients. Raw courgette is tasty in salads, cut into thin strips.

If you have loads to use up, use a spiraliser to make ‘courgetti’ (a delicious and healthy subsitute for spaghetti).

Good to know!

Courgette flowers are edible and delicious stuffed! They are hard to get your hands on though, unless you grow you own!
