Broccoli

Buying

To maximise life expectancy, choose firm, dark green heads with compact florets and no signs of yellowing. Look for firm strong stems that aren’t woody.

Storing

Place broccoli in the vegetable drawer of your fridge. If it came in plastic, leave it wrapped. Poke a few holes in the film to allow air to circulate. It should remain fresh for up to 7 days.

Freezing

Broccoli freezes very well. Blanch first by immersing in boiling water for 2 minutes. Drain, cool and place in airtight containers or bags.

The stems of broccoli are edible and delicious but frequently overlooked and discarded. Peel or chop away the tough exterior to get to the succulent core within. Slice thinly and eat raw or stir fry with some soy sauce and a sprinkle of sesame seeds for an Asian style side dish. Often viewed as ‘the cook’s treat’, this delicacy may never get anywhere near the pan or the table!
